Sancocho is a Puerto Rican soup that I grew up eating but is usually made with lots of meat. I wanted to create a plant-based version of this soup with the same taste and consistency just without all the meat. This soup is a big warm hug in a bowl with lots of flavor and healing ingredients for the gut.
What you need
- 2 tablespoons olive oil or avocado oil
- 3 cloves garlic minced
- 1 tablespoon of Turmeric powder
- 1 medium onion diced
- 2 pinches of dried oregano
- a handful of chopped cilantro
- 2 quarts low sodium vegetable stock or water
- 1/2 green pepper chopped
- 1 large carrot cut into cubes
- 1/2 cup of chickpeas
- 1 taro root peeled and cut into 1-inch pieces
- 1 cassava (yuca) peeled and cut into 1-inch pieces
- 1 green plantain peeled and cut into 1-inch pieces
- 2 ears corn cut into 1-inch pieces
- 1/2 cup tomato sauce
- 1/2 teaspoon Himalayan salt
- 1/4 teaspoon black pepper
- 1 large chayote squash – peeled, cored, and sliced lengthwise
- 4 potatoes peeled and cut up
Directions
- Start out by heating oil in a pot. Over low heat; add onion, garlic, cilantro, black pepper, oregano, turmeric, salt, and pepper. Cook and stir until onion is browned and very tender, about 20 minutes.
- Add the remaining ingredients and cover with the water or vegetable stock. If the water or vegetable stock does not cover all of the ingredients add more until it does.
- Bring to a boil. Once stock or water is to a boil, let simmer covered, for 35-45 minutes or until all of the vegetables are soft. Towards the last 10 mins of this simmer, you can add noodles of your choice. I really love the super thin, so you can do angel hair noodles and break them into smaller noodles before putting into the pot. Once noodles and vegetables are soft, remove from heat and serve. This meal goes great with a bowl of white rice or toasted bread. If the consistency of the soup is too watery for your liking, you can add some flour with some of the broth of the soup into a separate bowl until all flour is dissolved, then mixed back into the soup. This will thicken it up.
